RNS National Reporter Ulaa Kuziez thought she was getting an early start when she pulled into the Fort Worth BBQ joint Goldee’s at 9 a.m. earlier this summer. Instead, nearly 100 people were already waiting in the heat for barbecue that wouldn’t be served until 11. But the wait was worth it for some seriously good BBQ, Kuziez said. The award-winning joint offers classics like pork rib, but it also offers brisket and lamb that’s halal, opening the world of craft barbecue to a growing Muslim community in North Texas. It’s part of a new wave of craft barbecue restaurants serving halal meats. Amid a tide of Republican leaders in the state expressing anti-Muslim sentiment, Kuziez spent time with pit masters and diners for a look inside the rise of halal BBQ and what it says about food, belonging and who gets to claim a seat at the Texas barbecue table.
